Known for exceptional knife skills and deep knowledge of traditional butchery, David expertly breaks down carcasses, trims, and prepares a wide variety of cuts with speed and accuracy. Beyond the block, David is passionate about passing on his craft — training and mentoring apprentices to ensure the skills and traditions of butchery continue to thrive.
BUTCHER
With over five years of hands-on butchering experience and four years in the trade, Ryan brings precision, and a true passion for the craft. Starting as an apprentice, he quickly developed a strong foundation and now holds a thorough understanding of various meat types, their unique characteristics, and the techniques that bring out their best. Ryan specializes in seam butchery, boning out cuts with care and efficiency, and is equally skilled in sausage making — blending tradition with creativity. Whether he's breaking down primals or perfecting small-batch sausages, Ryan brings focus, pride, and a friendly attitude to every task.

EJ is enthusiastic about learning the craft of butchery and is grateful for the opportunity to grow within the industry from a young age. With a long-term goal of becoming a skilled butcher and gaining insight into the broader aspects of the business, he approaches each day as a valuable learning experience. He enjoys the diverse perspectives he gains — from cutting techniques and culinary applications to customer service — and takes pride in translating that knowledge into a better, more informed experience for customers. With curiosity, dedication, and a passion for the trade, EJ is building a solid foundation for a future in both butchery and business.
